Three cups of chicken is one of the most famous dishes in Taiwan, basil is the soul ingredient of this dish.
Wash the drumsticks and cut them into small pieces. Then blanch the chicken and set aside.
Cut the ginger into pieces, about a dozen pieces or so. Peel the garlic cloves, cut the scallion and red bell pepper into sections.
Heat wok, add some siritch, (not too much, chicken skin will be out of oil), add the ginger and fry until browned.
Add the garlic, chilli and scallions and continue to stir.
Add the chicken pieces and stir-fry them until they're fragrant, then add the most important ingredients: three cup!
Three Cup Recipe: Rice wine + soy sauce + rock sugar in a ratio of 4:2:1. For the four drumsticks, 8 teaspoons of rice wine, 4 teaspoons of soy sauce (3 teaspoons of light soy sauce, 1 teaspoon of dark soy sauce) and 2 teaspoons of rock sugar.
Turn down the heat to thicken the broth and make sure to turn the chicken over.
When the sauce thickens, add the basil and cover the pot to simmer for a while. Basil is the soul of three cups of chicken, and without it is like a dish without salt.
The last step, you can pour a little bit of black sesame oil, out of the pot to plate, yummy ah!
