Mapo tofu (Chinese: 麻婆豆腐; pinyin: mápó dòufu) is a popular Chinese dish from Sichuan province. It consists of tofu set in a spicy sauce, typically a thin, oily, and bright red suspension, based on douban (fermented broad bean and chili paste) and douchi (fermented black beans), along with minced meat, traditionally beef.

Cut the tofu into 1.5cm squares, put the tofu in boiling water for about three minutes, then remove and set aside.

Cut the beef into minced meat, then grab with starch and a little cooking wine, then set aside.

Mince the ginger and garlic.

Cut the shallots into two pieces, and use the smaller pieces as a garnish at the last step.

Chop the Douchi and mix with the Douban sauce.

Heat the oil in a wok, add the minced beef and saute for a while, then put it in a bowl.

Heat the oil in the wok, add the dried chilli and sichuan peppercorns, stir fry slowly over low heat until fragrant. (Be careful not to burn)

Remove the dried chilies and sichuan peppercorns to avoid affecting the taste, only leave the oil.

Turn the heat to medium, add the bean paste and black bean paste, stir - fry until red.

Turn the heat on high, add scallions, ginger and garlic, and fry until fragrant.

Add the tofu and gently shake the wok.

Add water and just cover the tofu.

When the water comes to a boil, add the minced beef, light soy sauce and black pepper and stir gently until well combined. Turn the heat down, cover the pot and cook for about 5 minutes. (In the meantime, you can remove the lid and gently push with the spatula to keep the pan from sticking.)

While the tofu is boiling, mix a bowl of water starch.

When there is a little water left, add the water starch. Give it a nudge with the shovel.

Cook until the soup is thick and sticky, then turn off the heat.

Place the tofu on a plate and drizzle with peppercorn oil and chilli oil.

Sprinkle the shallots on the top, and the mapo tofu is ready now.
