Kung Pao chicken, also transcribed Gong Bao or Kung Po, is a spicy, stir-fried Chinese dish made with cubes of chicken, peanuts, vegetables, and chili peppers.

Wash the chicken breast and cut it into small cubes.

Wash the cucumber and cut it into small cubes. Slice the ginger, peel the garlic and chop it into minced garlic. Soak dried chillies in water for a few minutes before cutting them into small pieces with scissors. Remove the seeds from the center of the chillies.

Put the chicken breast into a bowl, add a spoon of pepper powder, a spoon of light soy sauce, a spoon of dark soy sauce, a spoon of oyster sauce, appropriate amount of starch, use chopsticks to stir them well, marinate for about 5 minutes.

Heat wok, add peanut oil, heat, then add ginger, garlic, dried chilli, bean paste, fry until fragrant.

Add the chicken breast and stir-fry until medium.

Add the cucumbers and carrots and continue to stir, add proper amount of salt and chicken essence.

Gong Bao chicken is ready.
